Have you been to Cafe du Monde in New Orleans for their beinets and coffee? I got this recipe for beinets from a New Orleans cookbook when visiting there. I think you'll love this recipe!

Ingredients For beinets
- BEINETS (MAKES 2 1/2 DOZEN)

1/2 cboiling water

2 Tbspcrisco shortening
-
1/4 csugar
-
1/2 tspsalt
-
1/2 cevaporated milk
-
1 pkgdry yeast
-
1/4 cwarm water
-
1egg beaten
-
3 3/4flour
-
powdered sugar
How To Make beinets

1Pour boiling water over shortening, sugar, and salt. Add milk and let stand until warm.

2Dissolve yeast in 1/4 cup warm water and add to milk mixture with the beaten egg.

3Stir in 2 cups flour and beat well. Gradually add remaining flour to make a soft dough. Place in a greased bowl and grease top of dough. (I use canola oil to grease bowl and top of dough).

4Cover with waxed paper and a tea towel. Chill until ready to use.

5Roll dough to 1/4 inch thickness. Do not let dough rise before frying.

6Cut into squares and fry a few at a time in deep hot fat and brown on one side, turn and brown on the other side. (They get done really fast!)

7Drain on absorbent paper and sprinkle well with powdered sugar. (Make sure grease isn't too hot or dough too thick).
