I'm always on the lookout for healthy after school snacks for the kids. Ran across this recipe awhile back and it fit the bill! With no refined flours-just oats, it's chock full of fruit and whole grain yumminess! Can easily be made gluten-free by using gluten-free oats.

Ingredients For banana oat bars

  • 6 Tbsp
    butter(i often use coconut oil), room temp.
  • 1/4 c
    brown sugar(i use honey or maple syrup)
  • 1
    egg
  • 3
    bananas, mashed
  • 1/4 tsp
    salt
  • 2 c
    oats
  • 1/2 c
    raisins
  • 1/4 c
    unsweetened coconut, optional
  • 1/4 c
    mini chocolate chips, optional

How To Make banana oat bars

  • 1
    Pregeat oven to 350F. Grease an 8x8in baking pan.

    Cream butter and sugar. Beat in egg. Add mashed banana and salt and stir. Stir in oatmeal, raisins and any optional ingredients.

    Spread in pan and bake 30-40 min. until light golden brown. Cool in pan and cut into squares.
