I found this recipe on another website a few years ago & changed it up, to be a little lighter & a little yummier.

Ingredients For banana crumb muffins my way

1 1/4 call-purpose flour
-
1/4 cwhole wheat flour
-
1 tspbaking soda
-
1 tspbaking powder
-
1/2 tspsalt
-
1/2 tspground cinnamon
-
1/4 cfinely chopped walnuts
-
3bananas, mashed
-
1/2 cwhite sugar
-
1/4 clight brown sugar, packed
-
1egg, lightly beaten
-
1/4 ccanola oil
-
4 ozunsweetened applesauce
- TOPPING
-
1/3 clight brown sugar, packed
-
2 Tbspall-purpose flour
-
1/4 tspground cinnamon
-
2 Tbspfinely chopped walnuts
-
1 Tbspbutter, plus 1/2 tsp. more butter, if needed
How To Make banana crumb muffins my way

1Preheat oven to 375°F. Lightly grease muffins cups or use muffin liners.

2In a large bowl, mix together the flours, baking soda, baking powder, salt, cinnamon, & walnuts.

3In another bowl, beat together bananas, sugars, egg, oil, & applesauce.

4Stir the banana mixture, into the flour mixture, just until moistened.

5Spoon batter into prepared muffin cups.

6In a small bowl, mix together 1/3 cup brown sugar, 2 Tbs. flour, & 1/4 tsp. cinnamon. Cut in 1 Tb. butter, until mixture resembles coarse cornmeal. Add walnuts. If mixture seems too dry, add part or all of the 1/2 tsp. of butter Sprinkle topping over muffins. Push topping down a little on each muffin, so it will stay better.

7Bake in the preheated oven for 18 to 20 minutes, until a toothpick inserted in center of a muffin comes out clean. Take out of oven.

8Cool slightly in pan on rack; approx. 3 minutes. Then, take the muffins out of the pan & place on rack for further cooling.
