baked apple pie cheesecake, my way

I honestly don't remember where I got this recipe. But since I love apple pie, and I love cheesecake, this was a no brainer! I added the apple pie spice to the recipe.

Ingredients For baked apple pie cheesecake, my way

3granny smith apples, peeled and sliced (about 1 lb)

1 1/4 csugar, divided

1 1/2 tspcinnamon, divided

1 1/4 cgraham cracker crumbs

1/4 cquaker oats
-
2 Tbspmelted butter
-
32 ozcream cheese, softened (four 8 oz pks)

1 tspvanilla
-
4eggs
-
2 tspapple pie spice, heaping
How To Make baked apple pie cheesecake, my way

1Cook apples, 1/4 c sugar and 1/2 t cinnamon in saucepan until apples are tender, stirring frequently, about 6 min. Cool.

2Oven to 325 degrees. Combine oats, graham crumbs, remaining cinnamon, 2 T sugar, and butter. Press into bottom of 9" springform pan.

3Beat cream cheese, vanilla and remaining sugar and apple pie spice, and mix until well blended. Add eggs 1 at a time. Mix after each until well blended.

4Spread 1/2 apples on bottom to 1/2 inch of edges. Cover with cream cheese mixture. Refrigerate remaining apples until ready to use. Bake cheesecake 1 hour 10 min, until center almost set. Run knife around outside of pan to loosen. Remove rim. Refrigerate 4 hours once cooled. Do not refrigerate while cheesecake is hot.

5Just before serving, top with remaining apples.
