This recipe was a staple at my friend Kina's house, and now that I have the recipe, it has become a favorite and often requested recipe for me to bring to family dinners. It is so easy to make, and so incredibly good, you will surely make it one of your 'go to' recipes also! You can omit (yeah, right!) amaretto if you increase water to 3/4 cup and add 1/2 t almond extract.

Ingredients For amaretto (drunken) cheesecake

2 cgraham cracker crumbs

1/2 cmelted butter

1/2 ccold water

11 oz package knox unflavored gelatin

38 oz packages cream cheese, softened

1 1/4 csugar

5 ozevaporated milk

1 tsplemon juice

1/3 camaretto
-
1 tspvanilla

3/4 cwhipping cream
How To Make amaretto (drunken) cheesecake

1Combine crumbs and butter and press into a 9" springform pan. Chill.

2In pan, pour gelatin over cold water and let stand 1 minute before dissolving over low heat. Set aside.

3Beat cream cheese and sugar fluffy. Gradually add milk and lemon and beat fluffy. Gradually add gelatin, amaretto and vanilla and beat well. Fold in cream and pour into crust. Chill at least 8 hours. Garnish with chocolate sauce and berries if desired.
