This is the first posting of what I call my "Almost no sugar~no fat" recipe series. They have some, so please don't flame me about it. I cook these for diabetics that have no one to cook for them and wouldn't have any sweets, if I didn't.

Ingredients For almost no sugar-no fat chocolate chunk banana bread

2 call purpose flour
-
1 csplenda granulated + 1tbs splenda brown blend

2 tspbaking powder (fresh! not month's old in your cupboard)

1/4 tspsalt

2egg whites
-
1 1/2 cmashed ripe bananas (about 3 medium size)

1/3 coil or substitute unsweetened apple sauce

1/4 clow fat milk
-
1/4 tspvanilla extract
-
1/4 tspcinnamon
-
6 ozsugar-free semi sweet chocolate morsels (available at amazon.com)

1/2 cchopped walnuts or pecans (optional)
How To Make almost no sugar-no fat chocolate chunk banana bread

1PREHEAT oven to 350°F. Mix flour, sugar, baking powder and salt in large bowl; set aside. Stir egg whites, bananas, oil and milk in large bowl until well blended. Add dry ingredients; stir just until moistened. Stir in sugar-free chocolate and walnuts.

2POUR into greased 9x5-inch loaf pan. Metal!

3BAKE 55min (Maybe a little more, foil top if browning too rapidly) or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack. Cut into 18 (1/2-inch-thick) slices to serve. Enjoy!

4After reading an excellent suggestion from a poster here, I will soon try using King Arthur's White Whole Wheat Flour. If/when I do, I will up-date this recipe.
