This recipe was given to me about 12 yrs ago by my supervisor in J C Pennys. I make it every week for our church potluck. If I don't bring it, people complain. Many people have requested the recipe but I think they prefer I make it. It is tricky when you cut the bars. They have to be totally cooled and cut carefully with a small knife. The edges of the pan get sticky with the carmelization so you have to practice on cutting them just right. Enjoy!

Ingredients For aileen's lemon bars

  • 2 c
    all purpose flour
  • 1/2 c
    powdered sugar
  • 1/2 tsp
    salt
  • 1 c
    butter, softened
  • MIX THE BELOW INGREDIENTS WHILE CRUST IS BAKING
  • 2 c
    sugar
  • 4 lg
    eggs
  • 1/3 c
    lemon juice (concentrate or fresh)
  • 1/2 tsp
    baking powder
  • 1/4 c
    flour

How To Make aileen's lemon bars

    Melt the butter for 1 minute in the microwave,cool. Sift the flour, sugar and salt into medium bowl. Pour the butter into flour mixture; mix well. Pat the mixture evenly into a lightly greased lasagna-sized pan. Bake in 350 degree oven for 20 mins.

    Mix sugar, lemon juice and eggs well. Then add baking powder and flour, mixing lightly. Pour mixture evenly over lightly browned crust. Bake 25 minutes until top is browned . If lightly browned, turn off oven and let it brown a little longer. Remove, dust with powdered sugar and cool overnight. Cut into bars.
