My kid was so happy to have delicious ice cream. Worth the investment in time if you are on the Specific Carbohydrate Diet. Not hard to make, if you are already making SCD yogurt. I bought a refurbished Wolfgang Puck electric ice cream maker, that doesn’t require ice & just sits on the counter to make the ice cream. They are small batches, but we do one right after the other, and keep two flavors of ice cream on hand. Freezing part of the mixture in ice-cube trays, and keeping part liquid, if you have a Vitmix to blend it up, may also work well.

Ingredients For scd ice cream

  • 1 1/2 c
    scd yogurt made from half & half (only ingredients should be cream & milk in the half & half)
  • 1/3 c
    honey
  • up to 1 tsp
    total alcohol based scd legal extract (no sugar), such as trader joe’s bourbon vanilla and/or cook’s almond extract
  • 1/2-1 tsp
    each frontier co-op flavoring such as orange flavor, lemon flavor, and/or mint flavor
  • 3-5 pinch
    salt

How To Make scd ice cream

    If using an ice cream maker, follow the directions of the ice-cream maker. Add ingredients to a blender & combine till frothy. Try different flavor combinations that sound good to you. Sometimes we add cinnamon, too. Some favorites are orange + vanilla + almond, lemon + mint + vanilla, orange + mint + vanilla + almond + cinnamon, lemon + orange. Mint is strong, and does not need more than 1/2 tsp.

    Once mixed till frothy, either freeze in an ice cream maker, or freeze in ice cube trays & then blend the ice cubes in a high powered blender (like Vitamix), when ready to make into ice cream & eat.

    You can “drip” the SCD yogurt made from Half & Half prior to using, and discard the whey, and use some of that dense dripped yogurt in this recipe for an even richer/smoother ice cream.
