Scott's Seafood is no longer around, but I've tried this recipe, and it's awesome. (and easy,too!)

Ingredients For raspberry jack

  • 1/2 pint fresh raspberries
  • 3 tbsp. triple sec liqueur
  • 1 cup heavy cream
  • 8 scoops rich vanilla ice cream

How To Make raspberry jack

  • 1
    Put rinsed raspberries on paper towel to absorb any excess water. Then place in a bowl and add 3 Tbsp. triple sec. Let stand til ready to use but no longer than 1 hour.

    Whip cream til stiff

    In 4 in individual serving dishes, put 2 scoops of vanilla ice cream. Divide raspberries into 4 portions and add to ice cream. top with whipped cream and serves. Serves 4
