I love to make popsicles out of any fruit juice,especially for my little ones. If you like fruit in the popsicle,remove some of the pineapple before blending and stir in with the lime juice. Any juice can be made into these icy treats,my new flavor is cranberry! Just pour cranberry juice into molds and freeze. If you don't have the molds,just pour juice into a small cup( like a Dixie cup) partially freeze then put a stick in the middle and freeze completely.

Ingredients For pineapple popsicles

3/4 cup sugar

1 c water

2 c finely diced fresh pineapple

1 t. fresh lime juice
How To Make pineapple popsicles

1Bring sugar and water to a boil in a small saucepan over high heat, stirring until sugar dissolves. Chill syrup until cold, about 1 hour. Purée syrup and pineapple in a food processor until smooth. Set a fine-mesh strainer over a medium pitcher; strain, pressing on solids to extract purée. Stir in lime juice. Divide among molds. Cover; insert ice-pop sticks. Freeze until firm. Dip bottoms of molds into hot water for 20-30 seconds to loosen pops. Remove pops and serve.
