My wonderful husband surprised me for our 30th wedding anniversary with a trip to Italy this summer. Part of the time,we rented a home that included a cook,she was wonderful to share some of her recipes,this is one I really enjoyed. This is her original recipe,but I think when I make it I would omit the thyme,try both ways and see which way you like it. I wrote this recipe while watching her make the granita,these are approximate measurements as she did not measure.

Ingredients For italian lemon granita

1 c1 cup water

2/3 csugar

2/3 clemon juice

2fresh thyme sprigs

2 tspgrated lemon peel
How To Make italian lemon granita

1In a saucepan, bring water and sugar to a boil. Cook and stir until sugar is dissolved. Remove from the heat; stir in lemon juice and thyme. Transfer to an 8-in. square dish; cool to room temperature. Remove thyme sprigs. Freeze for 1 hour; stir with a fork. Freeze 2-3 hours longer or until completely frozen, stirring every 30 minutes. Stir granita with a fork just before serving.
