Fresh cranberry cream is my family's favorite winter treat! They know the holidays are approaching when the cranberry cream comes out. The recipe makes a large amount and couldn't be simpler, no cooking involved - just mix together and freeze, serve like ice cream. You can whip up a batch and have a great treat ready to serve anytime. The flavors and textures are wonderful, tastes like holidays!

Ingredients For cranberry cream

  • 1 bag
    fresh cranberries
  • 1 c
    chopped pecans
  • 1 can
    crushed pineapple in heavy syrup
  • 2 c
    sugar
  • 1 lg
    tub of cool whip (or similar brand)
  • 8 oz
    cream cheese, softened

How To Make cranberry cream

  • 1
    In a large container, mix cream cheese and sugar well, then mix in Cool Whip. I use my electric hand mixer.

    Rough chop the fresh cranberries and pecans in food processor or by hand
  • 3
    Fold the pineapple, cranberries, and pecans into the cream cheese mixture.

    Pace container in freezer until solid. Scoop and serve like ice cream.
