1/4 ccold water

2 cvanilla or chocolate ice cream, softened

1 cwhipping cream

22cream-filled chocolate sandwich cookies, divided

1 tspvanilla extract

whipped cream, to garnis

maraschino cherries, to garnish
How To Make cookies and cream parfait

1Sprinkle the gelatin over the cold water in a small saucepan; let stand for 1 minute. Cook over low heat, stirring until the gelatin dissolves. Set the gelatin mixture aside.

2Position a knife blade in the food processor bowl; add the ice cream, whipping cream, 10 cookies, and vanilla. Process for 30 to 40 seconds or until smooth.

3Slowly pour the gelatin mixture through the food chute with the processor running, processing 1 minute. Let stand 5 minutes or until the mixture is thickened.

4Coarsely crush the remaining 12 cookies. Alternately layer cookie crumbs and ice cream mixture in 6 parfait glasses. Chill for 1 hour or until set. Garnish with whipped cream and cherries.
