These cookies are delicious by themselves but ice cream just makes them better. Choose your favorite ice cream,but I love pralines n Cream,vanilla or lemon sorbet are my favorites.

Ingredients For oatmeal ice cream sandwiches

1/2 cbutter

1/2 cshortening or margarine

1 cfirmly packed brown sugar

1/2 csugar

2eggs
-
1 tspvanilla

1 1/2 coatmeal

1 3/4 cflour
-
1 tspbaking soda

1/2 tspsalt
-
3/4 cchopped pecans,optional

ice cream,sorbet or frozen yogurt,your flavor choice
How To Make oatmeal ice cream sandwiches

1Cream butter and shortening,gradually add sugars,beating at med.speed of electric mixer till light and fluffy.Add eggs and vanilla,beating well. Combine oats,flour,baking soda and salt.Blend in blender till powdered.Add to creamed mixture,mixing well.Stir in pecans,(if using pecans) Drop dough by heaping teaspoonfuls onto ungreased cookie sheets.Bake at 350 deg.for 12-14 mins.Remove to wire racks to cool. Put a small scoop of ice cream on a cookie and top with another cookie,pushing down lightly. Wrap each sandwich in saran wrap and chill in freezer until ice cream is firm.
