Zapple Crunch is a recipe that I've been making since the 1980's, whenever someone would leave a 5 or 6 pound zucchini on my doorstep. To be honest, I actually prefer this to its cousin, Apple Crunch. It's sweet, it's salty, it's buttery and it pairs perfectly with a hot cup of coffee or a cold glass of milk. Good recipes stand the test of time. This is one of them. Enjoy!

Ingredients For zapple crunch (zucchini/apple)

  • CRUST
  • 4 c
    flour
  • 1 1/2 c
    sugar
  • 1 1/2 c
    margarine or butter
  • 1/4 tsp
    salt
  • FILLING
  • 8 c
    seeded, sliced zucchini (slice as you would for apple pie)
  • 2/3 c
    apple juice
  • 1 Tbsp
    lemon juice
  • 1 c
    white or brown sugar
  • 1 - 2 tsp
    cinnamon

How To Make zapple crunch (zucchini/apple)

  • Adding crust mixture to pan.

    Preheat oven to 350°. Butter a 9x13 pan well. Set aside. In a large bowl, combine crust ingredients. Using your hands, mix well until it resembles coarse crumbs, breaking up any clumps. Set aside.
  • Sliced zucchini ready to cook.

    Peel and seed your zucchini. Cut into slices, as you would for apple pie. (Be sure to remove the spongy area around the seeds.)

    Place zucchini slices, apple juice and lemon juice in a large, deep soup kettle. Bring to a low boil, stirring occasionally, for 20 minutes.

    Lower heat. Then add sugar and cinnamon. Bring back up to a simmer and cook for 5 more minutes. Turn off heat.
  • Cooked zucchini slices.

    Pat a little more than half of the crumb mixture into the bottom of the pan. Pre-bake crust for 10 minutes. Remove from oven and pour zucchini and its sauce evenly onto crumbs. (May seem a little watery, but that's ok.) Top loosely with remaining crumbs, spreading evenly.

    Bake at 350° until lightly golden, approximately 40-45 minutes. Don't over bake. When done, sprinkle with sugar or top with vanilla ice cream or whipped cream, if desired.
