A warm fruity dessert that will smell up your kitchen with a yummy apricot fragrance! You may serve this with ice cream or with a dollop of whipped topping.

Ingredients For warm apricot buckle

  • butter, for greasing
  • 2 can
    apricot slices, drained
  • 3 tsp
    ground cinnamon
  • 1/2 tsp
    nutmeg
  • 1/2 tsp
    salt
  • 3/4 c
    butter, softened
  • 1 c
    self-rising flour
  • 3/4 c
    sugar
  • 3 lg
    eggs
  • 3 tsp
    vanilla extract

How To Make warm apricot buckle

    Butter and line the base of a 8-inch square pan with parchment paper. Set aside.

    In a medium bowl, toss the apricots with the cinnamon, nutmeg, and salt.

    For the batter, combine thebutter, flour, sugar, eggs and vanilla. Whisk until combined. Do not over mix.

    Pour and spread half of the mixture over the bottom of the prepared pan then spread the apricot mixture on the top. Pour the remaining mixture over the apricot mixture.

    Preheat the oven to 350 degrees F and bake for 45 to 50 minutes or until golden brown.

    Remove from the oven and let cool for 10 mins. Serve warm with whipped cream or ice cream.
