I just love Summer fresh fruits & berries, so many ways to use them! This pie went over so well that I barely was able to get a pic of just a slice!! Yummy!!

Ingredients For summer kissed lemon-berry pie

19" graham cracker pie crust, ( or u can make your own.)

1-1/2 cfresh strawberries, sliced thin

1-1/2 cfresh blueberries

4 Tbspsugar

4 Tbspcornstarch

4 Tbspreal lemon juice

2 Tbspwater
-
8 ozsoftened cream cheese
-
1/2 cpowdered sugar
-
2/3 csour cream
-
2 tsplemon extract
-
2/3 cvery cold whipping cream
How To Make summer kissed lemon-berry pie

1Heat oven to 350. bake pie shell about 10 mins or until a light golden brown. Let cool.

2In a large pan, mix berries w/ sugar and cornstarch. Stir in lemon juice & water. Heat over medium heat, stirring often, until thickened. Remove from heat & let cool.

3In large bowl, Beat cream cheese until smooth. Beat in powdered sugar, lemon extract & sour cream until smooth. Drizzle in the whipping cream( while beating on high) ingredients until fluffy. Spoon mix into pie crust & smooth the top. Refrigerate until firm, about 30 mins. Spoon berry mix onto top. I also place dollops of whipped cream on top and then place a slice of strawberry on the whipped cream to serve.
