My Mom use to make it a lot, she never had time to cook (as a single, working 2 jobs mother ), so all her recipes were simple, fast & supper yummy :) But now all my friends love it, as a result the picture I posted has only partial bake on it, it can't be left unattended, even to go get a camera ... lol

Preheat the over to F 375 Grease & lightly dust the 8"-9" form with flour. Peel & core all of the apples, slice 2-3 apples in to 1/8 or so & lay them nicely on the bottom of the form. ( the bottom may become the top, so you can get creative ;) The rest of the apples should be cut in to ~1" pieces & placed on the top of the rest, evenly mixed with raisins &/or craisins. *If you like cinnamon, you can dust it lightly over the apples. *If you don't have time, just cut all of the apples in to ~1" pieces & be done with it :D

Beat 6 eggs, vanilla extract & 1cup of sugar with a mixer, for a couple minutes gradually add 1cup of flour, mix well. Pour Mixture over the apples to cover. Place in the oven, Bake 45min to an hour, or till the toothpick comes out clean. *make sure you insert the toothpick in the batter & not the apple ;)

Let it cool off a little. You can turn it up side down , or present it right side up. (it won't really matter, because it will be gone before you know it) You can pour caramel over if you like. You can use some whipped cream for serving, or not... I like it Hot with a scoop of Vanilla Ice cream... Just make it your own ; *if it seems a little dry, means not enough apples, keep it up side down, it will absorb the moisture from the apples ;)
