Ingredients For sake poached pears with dark chocolate drizzle
- PEARS

2 1/2 cwater

1/2 csake

1 csugar

2star anise

1cinnamon stick

1lime, juiced and zested

2ripe pears, peeled and left whole
- DARK CHOCOLATE SAUCE

2/3 cheavy cream

1/4 cbutter
-
3 ozdark chocolate, roughly chopped

1 Tbspsugar

1lime, zested
How To Make sake poached pears with dark chocolate drizzle

1Put the water, sake, sugar, star anise, cinnamon, lime zest and juice in a deep pan. Simmer for 5 minutes, then add the pears and lower the heat. Simmer for 45 minutes until the pears are softened. Remove from heat and let cool in the liquid.

2To make the dark chocolate sauce, place all the ingredients except the lime zest in a saucepan and warm on the stove until the chocolate has melted and the sauce is glossy. Stir in the lime zest.

3Remove the pears and cut in half. Place one half on each plate and drizzle the sauce over top.
