A delicious Rhubarb dessert that goes great with ice cream, whipped cream or alone. This recipe was one of my Grams that I tweaked to my liking. ENJOY

Ingredients For ~ rhubarb crunch ~

  • CRUMBLE
  • 1 c
    quick cooking oats
  • 1/2 c
    flour
  • 1 c
    brown sugar, firmly packed
  • 1/2 c
    butter
  • RHUBARB MIX
  • 3 c
    rhubarb, chopped into 3/4 - 1 inch pieces - i cut stalks into and then chop
  • 1
    heaping tablespoon flour
  • 1 tsp
    ground cinnamon
  • 1/2 c
    sugar
  • 1/8 tsp
    salt
  • 1 Tbsp
    water

How To Make ~ rhubarb crunch ~

    Preheat oven to 350 degree F. Have an 11 x 7 baking dish sprayer with non stick cooking spray. Combine oats, brown sugar and flour, cut in the butter. ( I do this in my food processor. ) Press half of the crumbs, evenly into bottom of dish.

    In a bowl, combine rhubarb, flour, cinnamon, salt, sugar and water.

    Spread rhubarb mixture evenly over crumbs.

    Top with remaining crumbs. Place in oven and bake for 40 - 45 minutes or until rhubarb is tender.

    Serve as is or with whipped cream or ice cream. Enjoy...
