surprise rhubarb crisp

It's Rhubarb season, Do you love Rhubarb pie? If so then you will like this new twist on Rhubarb Crisp. I never had a recipe for this, I just made it from scratch and loved it so much that I make it this way now whenever I make it. Try it, I think you will like it.

Ingredients For surprise rhubarb crisp

  • 2/3 c
    all purpose flour
  • 1/2 c
    maypo or maple flavored oatmeal
  • 3 Tbsp
    granulated sugar
  • 1/4 c
    butter
  • 1/4 c
    crunchy peanut butter
  • 6 lg
    stalks of rhubarb cut into cubes
  • 3-4 Tbsp
    firmly packed brown sugar
  • 1/2 tsp
    cinnamon

How To Make surprise rhubarb crisp

    Preheat oven to 425 F .In a sprayed or greased 9 x 13 pan, add cubed rhubarb, sprinkle with brown sugar and cinnamon, stir until mixed through.

    For the topping , place the flour, oats, sugar, butter and peanut butter in a large bowl, mix well, crumble on top of rhubarb

    Bake until the rhubarb has softened and the crumble is lightly golden. 25-30 minutes. Serve warm or cold.
