Ingredients For raspberry bars

  • 3/4 c
    white whole wheat flour
  • 1/2 c
    chopped pecans
  • 2 Tbsp
    granulated sugar
  • 1/2 tsp
    salt
  • 3 Tbsp
    cold butter,cut into small pieces.
  • 2 Tbsp
    ice water
  • 1/2 tsp
    vanilla extract
  • raspberry filling:
  • 2 tsp
    unflavored gelatin
  • 2 Tbsp
    water
  • 3 c
    fresh raspberries divided
  • 1/2 c
    granulated sugar
  • 4 Tbsp
    nonfat cream cheese,softened
  • 2 Tbsp
    low-fat milk
  • 1 Tbsp
    confectioner's sugar

How To Make raspberry bars

    in a large mixing bowl,add thefirst 4 ingredients of the crust.mix together well with a fork or wire whisk.add in the butter and mix the vanilla with the ice water.gently pour and blend into the mixture,until well combined.form the crust and fit onto a loaf pan. you don't have to bake the crust because it doesn't have an egg.but you can depending on your preference.

    make the raspberry filling: wash raspberries and place in large pot with water,sugars,cook until tender and raspberries has cooked down.let cool before adding and mixing in the cream,so that it won't curdle. mix in the softened cream cheese well.mix in gelatin water mixture mix well.then mix the gelatin mixture into all the ingredients.pour over the crust that's in a loaf pan.cover with plastic wrap chill 2-4 hrs until gelatin mold is set.then you can enjoy.
