This is a tasty appetizer or refreshing dessert, Can't find fresh mint. Soak 1/2tsp dry mint in 1tsp water for 5 mins before mixing it with the fruit

Ingredients For rainbow fruit cup

  • 1; 8 oz
    can pineapple chunks, drained
  • 1 lg
    orange, peeled & & sectioned (i cut the sections in half)
  • 1 c
    fresh strawberries, sliced
  • 1 Tbsp
    fresh mint, minced
  • 1/2 c
    chilled ginger ale

How To Make rainbow fruit cup

  • 1
    In a medium sized bowl, gently stir together the pineapple, orange, strawberries, and mint
  • 2
    Spoon into sherbet dishes
  • 3
    Pour 2 TBSP of the chilled ginger ale over the fruit in each cup
  • 4
    Serve immediately
