Ingredients For pineapple cobbler
- PINEAPPLE FILLING:

1/2 cfirmly packed brown sugar

1/4 ccane sugar

3 Tbspcornstarch
-
1 lgcan crushed pineapple
- COBBLER:

2 call purpose flour
-
3 tspbaking powder
-
1 tspsalt
-
1/2 ccane sugar
-
1/2 cvegetable shortening
-
2 lgeggs
-
1 cmilk
-
1 tspreal vanilla extract
How To Make pineapple cobbler

1Preheat oven to 350 degrees. Grease and flour shallow casserole dish.

2Cook until it comes to a boil, sugars, cornstarch and pineapple. COOL!!!!!!

3Mix flour, baking powder, salt and sugar. Add shortening; mix until texture is like cornmeal. Add eggs, milk and vanilla.

4Pour Pineapple filling into greased and floured shallow casserole dish. ( I top with 3/4 cup of coconut.) Top with cobbler that has been patted out to just fit inside shallow casserole dish. (HINT: I make an milk wash and lightly brush top of cobbler and sprinkle granulated suger ( or cinnamon sugar)lightly over cobbler. Do this 10 minutes before end of cooking time as sugar can burn.)

5Bake at 350 degrees for 25 to 30 minutes. Good served warm with a scoop of vanilla ice cream.
