Got this from one of my coworkers, Jennifer. Some people may be wary of pineapple and cheese in same recipe, but once they try it, they will change their minds! This is delicious and my absolute favorite dessert.

Ingredients For pineapple cheesebake

  • 1 can
    pineapple tidbits
  • 2 c
    shredded cheddar, mild or sharp
  • 1 c
    sugar
  • 1 c
    flour
  • 1
    tube of ritz crackers
  • 1 stick
    butter

How To Make pineapple cheesebake

  • 1
    Preheat over to 425.
  • 2
    Drain juice from pineapple (but save the juice!)
  • 3
    Layer pineapple on bottom of a casserole dish.
  • 4
    Layer cheese on top of pineapple.

    Mix pineapple juice, sugar and flour and pour on top.

    Crush crackers (I just break them up in the package, and crush more if not small enough when opened.)

    Melt butter and mix with cracker crumbs, sprinkle on top.

    Bake for 25 mins.
