I have a feeling we'll be cooking our way through Malta for a contest on another site! I found this recipe on a Maltese site and changed it a bit to be easier for American bakers to deal with.

Ingredients For pears baked with wine and almonds

1/2 csweet dessert wine

1 cground almonds

2 Tbspsuperfine sugar

2 Tbspunsalted butter

1 Tbspamaretto (or !/4 tsp almond extract)

1 tspgrated lemon rind

ice-cream or whipped cream for serving
How To Make pears baked with wine and almonds

1Preheat the oven to 350ºF. Peel, cut in half and core the pears then arrange in a baking dish. Pour the wine over, cover tightly with foil and bake for 1–1½ hours or until tender.

2Place the ground almonds, sugar, butter, amaretto (or extract) and lemon rind in a bowl and mix until combined.

3Take the baking dish out of the oven, uncover pears and divide the mixture between them

4Return to the oven and bake, uncovered, for 15–20 minutes or until the almond mixture has browned. Serve with whipped cream or ice-cream.
