This is a refreshing and delicious summer dessert! It is an all time favorite at pot-lucks. I very seldom bring a bite home!

Ingredients For peach delight

  • CRUST:
  • 1 1/2 c
    all purpose flour
  • 3/4 c
    butter, melted
  • 3/4 c
    pecans, chopped
  • MIDDLE LAYER:
  • 8 oz
    cream cheese, room temperature
  • 1 sm
    cool whip
  • 2 c
    powdered sugar
  • FRUIT TOPPING:
  • 1 1/2 c
    water
  • 1 1/2 c
    sugar
  • 4 1/2 Tbsp
    clear jell (dry powder)
  • 1/4 tsp
    salt
  • 1 Tbsp
    corn syrup, light
  • 1 Tbsp
    lemon juice
  • 5 Tbsp
    dry jello, apricot or peach
  • 8-10
    ripe peaches

How To Make peach delight

  • 1
    CRUST: Mix together all ingredients and pat into 9x13 baking pan. Bake at 375 for 15 minutes. Cool thoroughly

    MIDDLE LAYER: Cream together all ingredients until smooth. Spread on cooled pecan crust.

    FRUIT TOPPING:Cook water, sugar, salt, clear jell, syrup, and lemon juice until thick and clear. Remove from heat. Add Jell-O. Cool. Add sugared,peeled, & cubed peaches to room temperature filling.Pour over cream cheese filling.
