I have a lemon recipe for the microwave and it is great. This should be even better.

Ingredients For orange curd

  • 1/2 c
    butter 4 oz. room temperature
  • 3
    eggs
  • 1/2 c
    freshly squeezed orange juice about 2 oranges
  • 2 Tbsp
    orange zest
  • 2 Tbsp
    lime juice 1 large lime
  • 1 Tbsp
    lime zest
  • 3/4 to 1 c
    sugar depending on sweet preference

How To Make orange curd

    In a large microwave-safe bowl, whisk together all the ingredients. Butter, sugar, eggs, orange juice and zest, lime juice and zest, the until smooth.

    Place in the microwave for one-minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a wooden spoon. This should take no more than 4-5 minutes depending on your microwave. It always takes 4 minutes to thicken.

    Remove from the microwave, cover and cool then place in sealed jars or containers. Store for up to three weeks
