A lite and fluffy orange dessert that has been enjoyed for many years. My ex mother in law gave me this recipe in the 1970's.

Ingredients For opal salad

  • 1 can
    crushed pineapple in own juices
  • 1/4 c
    sugar
  • 1 box
    large box of orange jello
  • 1 lb
    small curd cottage cheese
  • 2 can
    drained mandarin oranges
  • 3 c
    mini marshmellows
  • 1
    medium tub of cool whip

How To Make opal salad

  • 1
    Bring pineapple with juice and sugar to a boil.
  • 2
    Remove from heat and add jello, stir until desovled, then add cool whip and cottage cheese and 1 can of mandarin oranges (drained).
  • 3
    chill for 30 minutes in frig, remove and add marshmellows. Stir in and add remaining can of drained oranges on top in a clever pattern.
