old fashion blueberry squares

I love this recipe...it makes such a delicious old fashion type "pie square" Feel free to switch out the blueberry pie filling for cherry, apple, lemon, mincemeat or any other canned pie filling you enjoy, although I don't think pumpkin will work in this recipe at all. Enjoy!

Ingredients For old fashion blueberry squares

  • 2 stick
    butter, softened (1/2 lb)
  • 2 c
    sugar
  • 4
    eggs
  • 1 tsp
    pure vanilla extract
  • 3 c
    all purpose flour
  • 1 can
    blueberry pie filling or pie filling of choice

How To Make old fashion blueberry squares

    Preheat oven to 350 degrees Mix butter and sugar with mixer until incorporated, add all 4 eggs, 1 at a time, mixing well after each addition. Add vanilla and mix. Add flour in small batches until all the flour is combined.

    Plop 1/2 of the batter onto a greased cookie sheet that has sides all around it or a 15 x 11 pan if you have one. Use a greased hand or wax paper or a baggie on your hand or a spoon back sprayed with Pam ( i have used them all...none work that great) to get a good bottom crust placed in the pan ( this is the stickiest dough you will ever work with...if you manage NOT to throw it down the garbage dispoal in desperation, you will love this desert, but you will work for it just a bit here :) Once you have the bottom dough placed... sing a big Hallaliuia:)and then spread the pie filling evenly over the dough. Glob on the remaining half of dough over the top of the blueberries with a spoon, leaving some spaces open..the dough will spread some as it bakes. Fork flatten the upper dough and pop in the oven.

    Bake at 350 degrees for 40-45 minutes or until crust is a golden brown. Extra delicious and well worth the work (once its done and you have a slice in your hand...ha-ha-ha) Be brave...Enjoy!!!
