Ingredients For lemon passionfruit coconut slice
- BASE

90 gbutter softened

1/2 csugar
-
1egg
-
2/3 cplain flour

1/3 cs/r flour

1/2 clemon butter (i think it's called lemon curd in the us)

1 1/2 Tbsppassionfruit pulp
- TOPPING

2eggs
-
1/3 csugar

2 cdesiccated coconut
How To Make lemon passionfruit coconut slice

1Preheat oven 180 For the Base... Beat butter and sugar till light then Add egg and beat in then Sift in flours and mix. Spread into a lined pan 20x30cm Combine lemon butter and passionfruit pulp and spread over raw base

2For the topping... Beat eggs and sugar till light and fluffy. Then add the coconut and mix well. Spread the topping over the lemon butter base.

3Bake for 30 to 40 mins till golden brown Allow to cool in pan before cutting into squares
