Yes, another lemon bar recipe, I checked the others & they are all a little different, as is mine ;)

Ingredients For lemon bars

  • FOR CRUST:
  • 1 c
    soft butter
  • 1/2 c
    confectioner's sugar
  • 2 c
    flour
  • 1 dash
    salt
  • FOR FILLING:
  • 4
    eggs, beaten
  • 1/2 c
    flour
  • 2 c
    sugar
  • 6 Tbsp
    fresh lemon juice
  • grated rind of 2 lemons
  • confectioner's sugar for topping, optional

How To Make lemon bars

  • 1
    Combine ingredients for crust, mix well. Press into greased 9 x 13 pan. Bake at 350 for 25 min until lightly browned. Combine flour & sugar for filling, add eggs, juice & rind. Pour onto slightly cooled crust. Bake at 350 about 30 min until set. Cool, sprinkle with confectioners sugar if desired & cut into bars.
