I love blackberries and wanted to make a dessert w/ them, so I made this with some left over bisquick mix I had. Very good w/ whipped cream!

Ingredients For juicy blackberry upside down cake

  • 1/4 c
    butter
  • 1/4 c
    sugar
  • 1-1/2 c
    blackberries, fresh
  • 1-1/2 c
    bisquick, heart healthy mix
  • 1/2 c
    sugar
  • 1/2 c
    1% milk
  • 2 Tbsp
    canola oil
  • 1 tsp
    vanilla
  • 1 lg
    egg

How To Make juicy blackberry upside down cake

    Heat oven to 350. Place butter in a 9" baking pan. Put pan in oven until butter is melted. Sprinkle 1/4 cup sugar over butter. Arrange berries over sugar.

    In bowl, beat together remaining ingredients until mixed well. Pour batter over berries. Bake 35-40 mins, or until crust is lightly browned.

    Turn pan over onto a lg plate or platter, leave pan over cake for 5 mins. Remove pan from cake. Serve cake w/ whipped cream.
