jiffy apple cobbler

I created this recipe to use our homegrown frozen apples, but fresh apples could also be used. The warm cinnamon apple layer of this cobbler is moist and juicy, but not sloppy, and the topping has a sweet cinnamon crunch that kind of reminds me of my mother's cinnamon toast. It's easy to make, and so delicious! It's the perfect Autumn dessert.

Ingredients For jiffy apple cobbler

  • some
    butter for greasing dish
  • 1 qt
    frozen apple slices, thawed
  • 3/4 c
    sugar, divided
  • 1/2 tsp
    ground cinnamon, divided
  • 1 box
jiffy yellow cake mix (9 oz.)
  • 1/4 c
    salted butter, melted

How To Make jiffy apple cobbler

  • 1
Place one quart of frozen apple slices in a large bowl. Cover and allow time (about 4-5 hours) to thaw on counter, or thaw overnight in refrigerator.
  • Cobbler ingredients sans apples.
    2
Gather ingredients. Butter an 8"x8" baking dish. Preheat oven to 350 degrees F.
  • Apples, sugar and cinnamon simmering in pan.
    3
Add thawed apples, 1/2 cup of sugar and 1/4 teaspoon cinnamon to a large saucepan; gently stir to combine. Over medium/medium-low heat, bring to a low boil; gently stir and let simmer for 6 to 7 minutes.
  • Cooked apples in buttered baking dish.
    4
Remove from heat. Use a large slotted spoon to lift the apples from the juice and place apples in prepared baking dish. Reserve juice.
  • 5
Measure out 1/2 cup of reserved apple juice; pour over apples (if needed, add enough water or bottled apple juice to equal 1/2 cup.)
  • Adding Jiffy yellow cake mix to top of apples in dish.
    6
Sprinkle Jiffy yellow cake mix over all.
  • Sugar sprinkled over cake mix and apples.
    7
Evenly sprinkle 1/4 cup sugar over the cake mix.
  • Cinnamon sprinkled over sugar layer.
    8
Sprinkle 1/4 teaspoon ground cinnamon over all.
  • 9
Use a butter knife to gently make swirls in baking dish to combine some of the dry ingredients with the apple juices below.
  • Pouring melted butter over cobbler.
    10
Drizzle with 1/4 cup melted butter.
  • Jiffy apple cobbler fresh from the oven.
    11
Bake at 350 degrees F for 35 minutes, or until the top is golden brown and set. Allow to cool some before serving.
  • Jiffy apple cobbler, plated with ice cream.
    12
Serve hot or warm (with a scoop of vanilla ice cream or some whipped cream, if desired.) Refrigerate leftovers, uncovered.
