jake's huckleberry dessert

My husband came home from work the other day a raved about a dessert that Jake (our client and newly acquired huckleberry supplier) friend. He made the guys his special dessert. I called today and got the recipe. It is wonderful! Good thing I am in my office and no one can see me lick the bowl clean!

Ingredients For jake's huckleberry dessert

    16 ounce container of real sour cream
  • 3 Tbsp
    sugar
  • 1 tsp
    vanilla extract
  • 1 c
    frozen huckleberries
  • 2 Tbsp
    brown sugar
  • opt: cool whip or whip cream

How To Make jake's huckleberry dessert

    Preheat oven to 400 degrees. In a mixing bowl add the sour cream, sugar and vanilla. Mix with wire whip and add more or less sugar to your taste..a little on the sweet side to complement the berries.

    In 4 custard dishes, add 1/4 cup of frozen huckleberries into each dish. Divide the sour cream mixture evenly between the custard dishes on top of the berries.

    Oops, my husband stepped in and said it did not look right. The berries had been mixed into the sour cream, so that it looked purple.

    Sprinkle with brown sugar (again) and bake in oven until the brown sugar has melted and sort of caramelized. About 10 minutes.

    Opt: add a little Cool Whip or whip cream and enjoy!
