Ingredients For fried apple pancake rings

1 cbisquick baking mix
-
1 lgegg
-
1/2 cmilk
-
1 tsppumpkin pie spice
-
zest of 1/2 lemon, reserve juice and other 1/2 lemon zest

2 mdapples, pared and cored, leave whole
- APPLE CIDER SYRUP:

2 capple cider or apple juice
-
1 mdreserved lemon juice and zest

1/4 tspcinnamon
-
1/4 cgranulated sugar
-
2 Tbspcornstarch
-
1/4 tspnutmeg
-
1/4 cbutter
How To Make fried apple pancake rings

1Beat baking mix, eggs and milk with rotary beater until smooth. Add pumpkin pie spice and lemon zest of 1/2 a lemon to the batter and mix until incorporated. Grease griddle. Core and cut apples crosswise in 1/8 inch slices that look like doughnuts. Using a toothpick dip slices into batter. Cook on hot griddle until golden brown, turning once. Serve hot with apple cider syrup.

2Apple Cider Syrup: Combine sugar ,cornstarch, nutmeg, and cinnamon in a saucepan. Pour in apple and lemon juice and zest. Cook and stir constantly until thickened and it comes to a boil. Boil 1 minute and continue to stir. Remove from heat and stir in butter. Great over French toast, pancakes, bread pudding all cakes and pies and other desserts.
