Finally I got to cook some of those wonderful Fredericksburg peaches before we ate them right out of the basket. This is the result. I hope you like it.

Ingredients For fresh peach tart (sallye)

  • SOUR CREAM CRUST
  • 1-1/4 c
    flour
  • 2 Tbsp
    sour cream
  • 1/4 tsp
    salt
  • 1/2 c
    butter (1 stick)
  • PEACH FILLING
  • 1 qt
    thinly sliced fresh peaches
  • 1 c
    granulated sugar
  • 3 lg
    egg yolks
  • 1/3 c
    sour cream
  • 1 tsp
    pure vanilla extract
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    salt
  • 1 dash
    rum extract (optional)

How To Make fresh peach tart (sallye)

    TO MAKE CRUST: Combine the flour, sour cream and salt in a large mixing bowl and mix well with wooden spoon. Cut in the butter until dough is crumbly.

    Preheat oven to 375º Lightly spray or oil a 9" x 9" cooking dish or pan. Press teh dough mixture into the bottom of baking dish. Place in preheated oven and bake for 20 minutes. Remove from oven.

    TO MAKE THE TART: Remove the pit and thinly slice the fresh peaches (do not peel) Arrange the peaches over the baked dough.

    Combine the sugar, egg yolks, sour cream, flavorings and salt in a mixing bowl Beat at low speed until blended. Ladle over the peaches.

    Return dish to preheated oven. Bake for 45 minutes . Remove from oven and let stand until cool before serving.
