Finally I got to cook some of those wonderful Fredericksburg peaches before we ate them right out of the basket. This is the result. I hope you like it.

Ingredients For fresh peach tart (sallye)
- SOUR CREAM CRUST

1-1/4 cflour
-
2 Tbspsour cream
-
1/4 tspsalt

1/2 cbutter (1 stick)
- PEACH FILLING

1 qtthinly sliced fresh peaches
-
1 cgranulated sugar
-
3 lgegg yolks
-
1/3 csour cream
-
1 tsppure vanilla extract
-
1/2 tspcinnamon
-
1/4 tspsalt
-
1 dashrum extract (optional)
How To Make fresh peach tart (sallye)

1TO MAKE CRUST: Combine the flour, sour cream and salt in a large mixing bowl and mix well with wooden spoon. Cut in the butter until dough is crumbly.

2Preheat oven to 375º Lightly spray or oil a 9" x 9" cooking dish or pan. Press teh dough mixture into the bottom of baking dish. Place in preheated oven and bake for 20 minutes. Remove from oven.

3TO MAKE THE TART: Remove the pit and thinly slice the fresh peaches (do not peel) Arrange the peaches over the baked dough.

4Combine the sugar, egg yolks, sour cream, flavorings and salt in a mixing bowl Beat at low speed until blended. Ladle over the peaches.

5Return dish to preheated oven. Bake for 45 minutes . Remove from oven and let stand until cool before serving.
