One of the very best parts of summer on the family hobby farm are fresh, sun-ripened strawberries. I love to use them in dozens of ways. But, if you need a quick and easy dessert, filled with the flavors of summertime, this one is for you. =)

Ingredients For farm fresh strawberry bars- a family favorite

  • OATMEAL CRUST & CRUMBLE TOPPING
  • 2 c. quick cooking or regular oats
  • 2/3 c. brown sugar
  • 1/2 tsp. salt
  • 1 1/2 c. all purpose flour
  • 3/4 c. butter nearly melted, (i use country crock almond plant butter in all of my baking)
  • FRESH STRAWBERRY LAYER
  • 3 1/2-4 c. fresh strawberries, sliced
  • 2 tb. fresh lemon juice
  • 3-4 tb. sugar
  • 2 tsp. cornstarch
  • VANILLA DRIZZLE
  • 1 c. powdered sugar
  • 1 1/2-2 tb. milk or half & half
  • 1 tsp. vanilla

How To Make farm fresh strawberry bars- a family favorite

    Preheat oven to 375 degrees. Grease and then line a 13x9 cake pan with parchment paper.
  • Pat down oat crust,

    In a large bowl, combine the first five crust/crumble ingredients until no dry pieces remain. Reserve 1 cup and then place rest in the pan, patting down to form the crust.
  • Fresh strawberry ingredients.

    Combine the next four strawberry layer ingredients and spread evenly over the crust.
  • Sprinkle 1 cup reserved crumble mixture over berries.

    Sprinkle the reserved oat mixture over the berries. Bake at 375 degrees for 35-40 minutes until oats begin to turn golden. Cool completely.
  • Drizzle with icing.

    Mix vanilla drizzle ingredients together until smooth, adding milk until you reach your desired consistency. Drizzle as desired over cooled bars. You probably won't use it all.
  • Perfect dessert for a lazy summer afternoon.  =)

    Bars can be served room temperature or chilled. (We like them chilled with a topping of whipped cream on hot summer days.) Refrigerate leftovers.
