easy streusel crust pie

You won't find an easier and tastier way to do a fruit pie. I make this with fresh fruit when it's in season and during the winter months, I use pie filling in any fruit configuration that hits us! Hubby's favorite is cherry and I like them all. It's quick, very tasty, easy, delicious and the best part is no rolling of the crust dough! I make mine in a pie dish but you could use a tart pan if you wanted to be fancy!

Ingredients For easy streusel crust pie

  • 1-3/4 c
    all purpose flour
  • 1 pinch
    Kosher salt
  • 1/2 c
    light brown sugar, you can substitute granulated sugar if you prefer
  • 1/2 tsp
    cinnamon or to taste (optional)
  • 1/2 c
    room temperature butter, not margarine
  • 1 tsp
    vanilla or almond extract
  • fruit *** see notes
  • 1-2 Tbsp
    turbinado sugar, optional

How To Make easy streusel crust pie

    *** Note: The pie in the photo is peach. Regarding the fruit. Use fresh if you have it. If you are using peaches, apricots, or plums, peel them. Berries work wonderfully in this pie. You can use fresh or canned fruit or your favorite pie filling. If you are using canned fruit, drain thoroughly. Fresh fruit should be cut into small pieces to allow them to cook properly. If desired, precook or partially cook the fresh fruit before placing into the pie. If you are using pie filling, a single can (about 21 oz) will be enough for the pie

    Preheat oven to 375 degrees F. Spray a 9" pie or tart plate with baking spray and set aside.

    Cut the butter into pieces about 1-2 Tbsp in size. Place flour, salt, sugar, cinnamon, butter, and vanilla into a food processor and blitz until the mixture is crumbly. Take half of the crumb mixture and place it into the prepared baking dish. Using a spoon or bottom or a measuring cup, tamp it down on the bottom then press the remainder up the sides part way to form your crust.

    Spread the fruit or pie filling evenly over the crust. Take the remaining streusel mixture and spread it evenly over the top of the fruit. Sprinkle the turbinado sugar over the top of the crust - this is optional. I like to add it because it gives the top crust a bit more of a crunch.

    Bake for 35 - 40 minutes or until the top is golden brown. Remove from oven and allow it to cool for at least 20 minutes before serving. Serve warm or cold with whipped cream or a scoop of vanilla ice cream.
