So good, so good, SO GOOD! Quick and easy (takes only 5 minutes). Both gluten and lactose free. There is no end to variations you can create from the basic recipe of only 5 ingredients. Sometimes I add one or more of the following: any raw or toasted nuts, chocolate chips, raisins or other dried fruits, Kahlua instead of vanilla and stir in chocolate syrup or fudge sauce after processing or blending in good blender. Addendum: I have now made this often and replaced the dates with chocolate chips - scrumptious!

1 1/2 tspvanilla

5pitted, dried dates

6 Tbspmaple syrup (or to taste)

2 Tbspany nut butter of your choice (peanut, cashew, almond)
How To Make banana-maple-nut- non-dairy ice cream

1FIRST: Ahead of time, peel and freeze the bananas in a resealable plastic freezer bag or other freezer container. (Once they are frozen the prep time will be only 5 minutes.) You can freeze them the night before or the morning of. Note: I stay prepared by keeping them in the freezer at all times.

2Have all your ingredients ready when you remove bananas from freezer. Thaw the bananas only slightly if necessary, enough to process in a food processor or Vitamix machine. The bananas do not have to be hard as ice.

3Add a little at a time all the ingredients and enjoy. Note: You can serve it immediately as a soft ice cream or freeze it and eat later as a harder ice cream.
