Ingredients For dried fruit compote

1 1/2 cwater

1 1/2 corange juice

1/4 cmaple syrup

1 stick(3 inches) cinnamon stick

1(3 inch piece) vanilla bean, split open

2 Tbspchopped crystallized ginger

6-8dried figs
-
6-8pitted dates
-
1 cdried apricot halves
-
8-10prunes, pitted

1/2 cdried cranberries
How To Make dried fruit compote

1Place the water, juice, maple syrup, cinnamon stick and vanilla bean in a saucepan large enough to hold all the dried fruit

2Bring to a boil over high heat. Turn the heat to medium low and simmer for 15 minutes.

3Add the fruit and simmer for another 15-20 minutes, or until the fruit is soft. Let the fruit cool in the pan

4Discard the cinnamon stick and vanilla bean. Let cool. Serve with the poaching liquid.
