Crustless makes it easy for my kid with Crohn’s on the Specific Carbohydrate Diet, to digest. Since it’s crustless, I make sure it is full of flavor. Amazing dessert, served warm with SCD ice cream. For holidays, we serve it along with the crustless pumpkin pie & an assortment of ice creams, and no one feels like they are missing anything. Enjoy!

Ingredients For crustless peach cobbler (scd compliant)

  • 8
    apples, cored, peeled, diced
  • 5 lb
    sliced peaches
  • 1-2”
    piece fresh ginger, peeled & minced
  • 1 Tbsp
    ceylon cinnamon (if using regular cinnamon, use less. maybe try 1 tsp.)
  • 1/2 tsp
    mace or nutmeg
  • 1 tsp
    almond extract
  • 1/2 c
    lemon juice (or juice of 2 lemons)

How To Make crustless peach cobbler (scd compliant)

  • Pot with apples and peaches simmering; ready to add more peaches.

    In a big pot, add the diced apples, one pound of peach slices, the minced ginger, cinnamon, mace (or nutmeg), almond extract, and 2 cups of water. Simmer, stirring, about 25-30 minutes, until the apples & peaches have mostly broken down into a sauce, with some chunks. Note: If strong ginger is not your preference, feel free to reduce amount or use 1/2 tsp. ginger powder instead of fresh.
  • Pot on stove with the remaining 4 pounds of peaches just stirred in.

    Add the remaining 4 pounds of peach slices. Simmer, stirring, until these peach slices have softened and cooked to your liking. I cook for about another 25 minutes.
  • Peach Cobbler in two square pyrex dishes; one regular size and one a taller size.

    Stir in lemon juice, then immediately transfer the cobbler to a non-metal serving dish. Enjoy warm with SCD ice cream! I like to keep this in pyrex glass baking dishes with lids (no chance of metal reacting with the lemon juice to give unpleasant taste.) I usually freeze some in portions, if I am not serving a crowd.
  • Empty packages of Trader Joe’s frozen sliced peaches.

    NOTES: Trader Joe’s carries 1 pound packages of frozen peach slices, which I use when peaches are out of season. The ingredients listed are: peaches, ascorbic acid and citric acid added to maintain color. I rinse the frozen peaches well, in a colander, with warm water, and make sure to inspect for any pit fragments, before using.
