I enjoy making crepes and have several recipes for sweet and savory crepes and this is a nice change when I serve a dessert and my company gets a plate of crepes for a change, instead of cake or pie.

Ingredients For crepes with blueberry sauce

1/2 call purpose flour

1/4 cwhole wheat flour

1 cmilk

2large eggs

115 ounce ricotta cheese

3 Tbspconfection sugar

2 Tbsplemon zest

1tsp vanilla

blueberry sauce

3 Tbspsugar

2 Tbspcornstarch

1pint fresh blueberries or thawed, frozen drained
How To Make crepes with blueberry sauce

1BATTER...in medium bowl, mix together the flours, milk, and eggs..beat with electric mixer or use blender., cover with saran and refrigerate for at least 1 hour.

2FILLING...put cheese,confection sugar, lemon zest and vanilla,,mix well with wooden spoon,,cover with saran and refrigerate until ready to use

3SAUCE...In medium sauce pan mix granulated sugar and cornstarch til well combined add the water and stir constantly and cook til mix comes to a boil stir berries and lemon juice and cook for 10 more minutes..remove from stove and pour into bowl to cool.

4CREPES...lightly spray a 7 inch fry pan with cooking spray place on burner and heat, sprinkle pan with drop of water and when it sizzles it is ready..Stir batter and pour a scant 2 or 3 tablespoons of batter into pan and quickly rotate the pan so that bottom of pan is completely covered cook for a few minutes and cook til light brown and turn over and cook the other side til light brown,,,you will probably have to make a few crepes before you get perfect ones..you will have to lightly spray after 2 or 3 crepes..cool on wire rsck,,mix filling place crepe on plate and cover one half of the crepe with the filling..fold crepe in half and in half again..arrange on plate spoon some sauce on crepe and sprinkle with a little confection sugar if so desired.....delicious..enjoy
