A friend posted this recipe on Facebook over the weekend. As soon as I saw the recipe I went up to the store and bought some berries so I could make and take them to a cook out. They were a big hit! She got the recipe from the Homestead Survival web site. This is her picture and they really do turn out this purtee!

Ingredients For cheesecake stuffed strawberries
-
1 lblarge strawberries
-
18 ounce package cream cheese, softened
-
4 Tbsppowdered sugar
-
1 tspvanilla extract
-
1/4 - 1/2 cgraham cracker crumbs
How To Make cheesecake stuffed strawberries
-
1Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some of them are hollow already). Prep all of the strawberries and set aside.
-
2In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy (I think almond extract might also be yummy). Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.
-
3Once strawberries are filled, sprinkle or dip the tops with graham cracker crumbs. If not serving immediately, refrigerate until serving.
