I LOVE a lot of Paula Deen's Recipes. It is a great way to use up all those apples that come with this time of year!

Ingredients For caramel apple cheesecake bars

2 call purpose flour

1/2 cbrown sugar, firmly packed

2 stickbutter, softened

2 pkgcream cheese, room temperature

1/2 cplus 2 tbsp, sugar, divided

2large eggs
-
1 tspvanilla extract
-
3apples...peeled, cored and finely chopped

1/2 tspcinnamon
-
1/4 tspnutmeg
- STREUSEL TOPPING
-
1 cbrown sugar, firmly packed
-
1 call purpose flour
-
1/2 coats, quick cooking
-
1 stickbutter, softened
- DRIZZLE WITH 1/2 CUP CARAMEL TOPPING (ANY ICE CREAM BRAND) OVER FINISHED BARS
How To Make caramel apple cheesecake bars

1Preheat oven to 350 degrees.

2In a medium bowl, combine flour and brown sugar. Cut in butter until crumbly.

3Line a 13x9x2 pan with foil and lightly spray with cooking spray. It helps to spray your hands as well to press the mixture evenly in the pan. Bake for 15 minutes or until lightly browned.

4In a large bowl, beat cream cheese with 1/2 cup sugar until smooth.

5Then add eggs, one at a time until combines. Add vanilla, stir to combine. Pour over warm crust.

6In a small bowl, stir together chopped apples, 2 tbsp. sugar, cinnamon and nutmeg. Spoon over cream cheese layer.

7In another medium bowl, combine all streusel ingredients. Sprinkle over apple layer.

8Bake for 30 minutes. Let cook for 10 minutes and drizzle with caramel.
