I found this recipe in my box and had to share it. A friend in high school's dad used to make this for us for breakfast all the time! It is best served warm! Try with ice cream for a fruity dessert! Peach buckle is my favorite! :-)

Ingredients For buckle

2 cfruit such as peaches, strawberries, or blueberries

1 1/2 csugar
-
2eggs
-
1/2 cshortening
-
1/2 cmilk
-
2 cflour
-
2 tspbaking powder

1 tspsalt
How To Make buckle

1Mix fruit with 1/2 cup of sugar. Set aside.

2Cream together remaining sugar, eggs, shortening, and milk.

3In a separate bowl, sift together flour, baking powder, and salt.

4Add to egg mixture gradually. Stir in fruit/sugar mix.

5Bake in greased 9x13 pan at 350 for 30-35 minutes or until toothpick comes out clean.
