Blueberries are so plentiful and delicious this time of year that I wanted to make a good but easy blueberry cobbler. I found this recipe on allrecipes.com and have added an extra cup of blueberries to it. It was a hit with the family for our Saturday dinner.

Ingredients For bountiful blueberry cobbler

4 cfresh blueberries

3 Tbspwhite sugar

1 call purpose flour

1/2 tspbaking powder

1/2 cbutter

1/2 cwhite sugar

1egg

1/2 tspvanilla extract

1/3 corange juice, fresh
How To Make bountiful blueberry cobbler

1Mix blueberries, 3 tablespoons sugar and orange juice together in a bowl. Set aside. Mix flour and baking powder in a small bowl. Set aside.

2Cream butter and 1/2 cup sugar in a bowl with an electric mixer. Add egg and vanilla. Gradually add flour mixture. Place blueberry mixture in an 8 inch baking dish.

3Place the batter over the blueberries as evenly as possible covering the filling. Bake in a preheated oven at 375' for 40 minutes until the topping is golden brown and filling is bubbling. Enjoy !!
