Went Blueberry picking today right in my hometown. Got 8 lbs. The man that owns the farm asked me if I wanted some recipes. He told me that these Blueberry Scones are a big hit with everyone! So I decided to give them a try, he said they were delicious with your coffee. Just made them and oh yea they are delicious with tea too !!!

Ingredients For blueberry scones low cal

  • 2 c
    flour
  • 1/3 c
    sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 pkg
    8 oz lemon or vanilla yogurt
  • 1
    egg, lightly beaten
  • 1/4 c
    melted margaine
  • 1 tsp
    lemon peel
  • 1 c
    blueberries
  • glaze recipe in directions

How To Make blueberry scones low cal

    Combine dry ingredients. Combine margarine, yogurt, egg and lemon peel. Stir moist ingredients into dry until just moistened. Fold in berries. Drop onto greased baking sheet. Bake at 400 degrees for 15-18 minutes.

    GLAZE: 1 Tablespoon confectioner's sugar 1 Tablespoon Lemon juice 1/2 teaspoon lemon peel Spread on scones while still warm.
