Ingredients For blueberry cobbler

16 ozblueberries

1/2lemon (using the rind and juice)

3/4 tsppeeled, grated ginger

1/2 csugar, divided

1/4 tspsalt, divided

3/4 call purpose flour, divided

1/4 tspbaking powder

2 Tbspchilled butter
-
3 ozchilled cream cheese (reduced fat is fine)

1/3 cmilk (use buttermilk if you have it)

2 tspturbinado sugar (brown sugar is fine if its all you have
How To Make blueberry cobbler

1preheat oven to 375.

2coat baking dishes with cooking spray.

3grate 1/2 teaspoon of the lemon rind and set aside.

4combine blueberries, lemon juice and ginger in a medium bowl.

5add 1/4 cup sugar, 1/8 teaspoon salt and 1 tablespoon flour.

6toss to combine. add the blueberries to your coated dishes. use a 9 inch square dish or a combination of smaller dishes (ramekins work well).

7combine the remaining sugar, flour, salt and baking powder in a food processor. pulse until combined.

8add the butter, lemon rind and cream cheese to the food processor. pulse until the mixture looks like coarse meal.

9add the milk, and pulse until blended.

10spoon the mixture over the berries.

11bake for 30 minutes if using small ramekins, 45 minutes if using larger dish. serve with vanilla ice cream.
