Ingredients For blueberry desert

  • 4 c
    frozen blueberries (fresh when in season)
  • 1 Tbsp
    cornstarch
  • 3 Tbsp
    light agave nectar
  • 1 Tbsp
    lemon juice, fresh
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    salt
  • FOR THE TOPPING:
  • 1/2 c
    rolled oats
  • 1/4 c
    chopped toasted slivered almonds (you can use regular or sliced)
  • 1/4 c
    whole wheat flour
  • 1 1/2 Tbsp
    light agave nectar
  • 1 Tbsp
    brown sugar, optional
  • 1/4 tsp
    salt
  • 2 Tbsp
    coconut oil
  • 1 1/2 Tbsp
    bourbon (plus more to drizzle)
  • 1/4 tsp
    vanilla extract

How To Make blueberry desert

  • 1
    Coat blueberries in corn starch by giving them a toss in a bowl. When done, add in the remaining filling ingredients. Pour into an oven-safe baking dish (apx. 1 qt. size.)

    Next, prepare topping by mixing together all the topping ingredients. Spread evenly over berries in baking dish.

    Bake for 1 hour in a 375 oven. When cooked through, remove from oven and sprinkle additional bourbon on top. (Use as much or as little as you wish.) Allow to cool, then prepare to enjoy.
